Top Picks: 5 Recipes from the Magenta Cakes Blog.

For this week’s Top Picks I decided to have a look through the blog, and to share with you five recipes from the blog archives.

I have choosen various cupcakes, cakes and sweet treats. Some contain chocolate, others have fruit and nuts in them. Some of them are fun such as the Mini Maltester Cakes and I’ve also included more of a traditional recipe – Plum & Hazelnut Upside Down Cake.

Apple Blossom & Blueberry Cupcakes

This is my first recipe review from my monthly feature on the Hummingbird Bakery’s ‘Cake Days’ recipe book.

You may notice if you already have the book, that I’ve adapted the ‘Apple Blossom Cupcake’ recipe to include Blueberries.  The main reason for this was that the recipe included a hard-to-find apple iced-tea powder.

This recipe perfectly complements the feelings I have during the month of February . It’s post diet season, and if you’re still watching the calories, but you really want a yummy cake, you can justify it with a carrot cake. It’s packed full of carrots right?  Therefore it must be good for you!

Chocolate Whoopie Pies

For this month’s recipe review of Hummingbird’s ‘Cake Days’ book I decided to try my hand at their Chocolate Whoopie Pie recipe.

The book states that this is the first type of Whoopie Pie they started selling in their bakery back in 2008, so I thought it must be popular, especially combining chocolate with a vanilla and marshmallow filling…yum yum indeed.

Plum & Hazelnut Upside Down Cake

This is perfect comfort food, I love the sweet tangy flavour of the plums against the nutty, warm spiced topping. If you’re a pudding fan like me, then you’ll love this.
