Mini Malteser cakes are great for a special treat and for those with a sweet tooth. Not only are they quick and simple to make, but they’re a perfect size for a lunchbox, party or family picnic.
I’ve used 4 mini loaf tins (my new favourite bake ware) and I’ve used a Leith’s recipe that uses a 450g loaf tin, so you can make a larger cake should you not have the smaller tins.
Recipe
85g Butter
170g of digestives biscuits, crushed
170g Maltesers, half crushed and half left whole
2 tbsp golden syrup
2 tbsp cocoa powder
Method
Melt the butter and golden syrup in a small, heavy pan.
Stir in the cocoa powder, biscuits and crushed Maltesers until well combined.
Allow to cool slightly then stir in the whole Maltesers.
Line the mini cake tins with clingfilm.
Pour the mixture in the tins and press down well, without crushing the whole Maltesers.
Chill in the fridge for 2 hours or until set.
The cakes should come out of the tins easily, remove the clingfilm and slice if required.
For decoration sift a coating of icing sugar over the top. Alternatively you could add sprinkles into the bottom of the tins prior to adding the mixture on top.
