Sweet Quote & Recipe for Pancake Day

It’s soon to be Shrove Tuesday, otherwise known as ‘Pancake Day’. It’s known as a time of eating rich food stuff that traditionally needed to be used up (such as flour, fat, eggs & sugars) before the start of Lent.

When I was a child, my mother always sought out the well thumbed ’Delia Smith’s Cookery Course’ book. We always used her basic pancake recipe, finished off with a sprinkle of sugar, and a squirt of lemon juice.

Lots of fun was had flipping those pancakes in the frying pan. Some stuck to the ceiling, others went on the floor, and a few made it onto the plate.

I now have my own copy of her classic book (which was first printed in 1978), and I continue to use the pancake recipe from it. It produces good, reliable pancakes and has enough mixture to make up to 14 pancakes if you use a 7 inch pan.

I’ve noticed that Delia hasn’t changed the recipe over the years, and it’s now available online here if you’re interested in making your own.
