Recipe ~ Easy Dark Chocolate Ganache

Don’t you just love dark chocolate ganache? It’s one of my favourite toppings for chocolate cupcakes and chocolate cakes. Whilst on a family holiday in Cyprus recently, I noticed that the hotel we stayed in regularly served chocolate ganache in one form or another in it’s desserts.  I am pretty certain that it was made using the same % of cocoa solids in the chocolate as I use (53.8%), as it tasted the same as the recipe I use at home and in my chocolate classes.

Chocolate ganache is so simple to make, it uses a combination of cream and chocolate.  It tastes so decadent, grown up and almost naughty.

In it’s fluid form, you must use it quickly as it will begin to thicken and set. I usually take a tablespoon or two and literally spoon it over a chocolate cupcake. Within ten minutes it will set enough to add any further decorations on top, or you could just take a big bite? I know what I’d rather do…

Recipe for Dark Chocolate Ganache (for topping 12 cupcakes)

 

200ml single cream

200g chocolate buttons ( I use Callebaut, 53.8% cocoa solids)

 

Method

- Place the single cream in a microwaveable bowl and add the chocolate buttons

- Microwave together for 1 minute, then stir

- Microwave for 30 seconds, then stir

- Repeat until the chocolate has melted into the cream, stir until smooth

Please note that the microwave I use is 900W, therefore you may need to adjust your microwave timings.

Paris & Le Bon Marche – Part 2

Le Bon Marche

Following on from  Part 1 of my recent visit to Paris, I wanted to share with you my trip to ‘Le Bon Marche’  which is one of the best known department stores in Paris. According to ‘Wikipedia’ the store was founded as a small shop in Paris during 1838, and began as a fixed price department store from 1850.

Initially it reminded me of Selfridges in London. On closer inspection, the decor was simply elegant combined with an air of French sophistication.

We casually browsed though the designer fashion departments, before heading towards the food hall.

Sugar decorations

The food hall caters for Parisians undertaking their weekly food shop, but it also has specialised sections selling food from around the world.

Their baking section was adorned with the most delightful sugar decorations that were shaped in handbags, teddy bears, the Eiffel Tower to name a few.

Not surprisingly, they had an extensive range of chocolates available that took up an entire section in the hall. The French love their chocolate and I wish we had the same variety back in the UK.

The patisserie counter was pristine, each product had been beautifully crafted and meticulously positioned to impress.

If you’re taking a shopping trip to Paris then I definitely recommend that you pay a visit to ‘Le Bon Marche’, you won’t be disappointed I promise. :)

Choccywoccydoodah Starstruck interview with Stephen Tompkinson

You may remember when I attended the Choccywoccydoodah Starstruck party last month to celebrate the launch of their forthcoming TV show. Well I can’t believe that the fourth series starts next week on 24th March on Good Food TV. How time has flown, and how I wish I could tuck into a box of dreamy choccywoccy chocolates as I’m typing this post…

So make yourself comfortable, as the lovely people at the Good Food TV channel have kindly shared an interview with the actor Stephen Tompkinson, who is the voice over for the series. Stephen talks about his involvement and the celebrity cakes featured.

I thought I’d share this interview on the blog so that ‘Choccywoccy’ fans or those who are just curious, can have a glimpse of what they can expect in the new series:

 So what can you tell us about the series and the challenges?
In the first series they get invited out to New York by Whoopi Goldberg, who’s hosting a party for a politician. She wants a cake designed in the shape of some of the iconic buildings of the city, and to have this candidate’s face put onto the Statue Of Liberty. But this has to all be done in New York, so they had to use American dairy products and chocolate, which they haven’t worked with before and it doesn’t behave in the same way. They’re not sure they can sculpt with it. The two Christines, who’ve baked for years, have to get stuck in and help out.

There’s always something different about each challenge, and each of the personalities they have to work with. Ivana Trump is having a party in the south of France, and the cake has to be made in England and then taken to St Tropez. These delicate works of art are made from chocolate… every time you go over a bump in the road or a pothole you wonder whether the thing will survive.

Then there’s the challenge set by Julien Macdonald, the fashion designer. He’s a very exacting and demanding man, and he wanted a cake to represent elements of a wedding dress he was designing. He also wanted it to reflect the gothic design of St Pancras train station, with a real clock in it! They only had four days to do it so it was a big ask. They are brilliant sculptors though, and there’s nothing they can’t put on a cake.

Jackie Collins wanted an almost life-size black panther on a cake, and the guys went down to the zoo to see how panthers moved. What breaks my heart though is that someone’s going to stick a knife into it and ruin it all!

Do you have a favourite moment from the series?

I think the Julien Macdonald cake was my favourite. It was such a work of art and I’m a big fan of the gothic style of architecture. But there was also a beautiful cake they designed for Cliff Richard, for a charity thing he was doing for Gloria Hunniford. It was helping to remember Gloria’s daughter, Caron Keating. They sculpt this angel – and I don’t want to give too much away – but things almost go horribly, horribly wrong, but a significant bit with an angel’s feather actually comes to the rescue. It’s very, very moving and was almost meant to happen.

Because these kinds of projects work with material that’s so delicate, it is literally heart in your mouth TV…
Absolutely. Just think to any taxi ride you’ve ever had across London. You’ll have to break at some point. And these cakes are big creations, and there’s an awful lot that go wrong. Going over a pothole could cause a cake to crumble or collapse. It’s a miracle they ever get anything to their destinations. The programme’s part cookery, part Grand Designs.

How about cakes? If you were to ask the Choccy team to make a cake for you, what would you go for?
I think I’d like one with some of my favourite comedians on, or even some of my favourite animals from Wild At Heart. In terms of comedians, I love silent film so I’d have people like Buster Keaton and Laurel and Hardy, and then maybe some people like Tommy Cooper, Morecambe and Wise and Les Dawson. That cake would probably last longer because no one would want to cut into that lot!

Love is….chocolate and cake, so it’s no surprise that I’ve always been a fan of Choccywoccydoodah  -the chocolate cake shop and cafe based in Brighton and London. Their chocolate cakes are like no-one else’s. Their flamboyant style and delicious creations cater for all occasions from birthdays and weddings, to high profile celebrity events.

Since 2008 they have been entertaining our screens with their hugely successful ‘Choccywoccydoodah’ TV series shown on Good Food TV. The launch of their forthcoming TV series ‘Choccywoccydoodah Starstruck’ wouldn’t be complete without a ‘Choccywoccydoodah’ party to celebrate the new series which is exclusive to Good Food TV.

Recipe ~ Creamy Hot Chocolate

We’re well known in Britain for talking about the weather, especially when it snows. It’s funny how the country comes to a halt when we’re coated with a layer of fluffy snow.  It’s no fun when the roads turn to sheet ice. In the UK we don’t handle snow and ice as well as other countries, even though we can expect to have some snowfall every winter. Let’s be honest, when it does snow it’s only a few inches at best.

Recipe ~ Christmas Fudge

This is the second recipe I’ve made from Sweets and Treats to Give Away by Diana and Rebecca Peacock. You may recall I made their ‘Honeycomb’ recipe recently which was fun to make and was utterly delicious. I like this book for the variety of recipes available for making traditional sweets, chocolates and cakes. I only wish that there were real images rather than illustrations which I highlighted in my previous blog post.

I had to share with you these fun Christmas rudolph cookies.  All you need is a cookie, piped chocolate, a red candy sweet such as a Skittle or M&M, and a tiny amount of sugar glue. They are so simple, but look so effective!

With Halloween on 31st October it’s time to start thinking about preparing for your Halloween party.
