I hope you’re all looking forward to the forthcoming Diamond Jubilee celebrations. If you’re celebrating the occasion with a street party or any party, then cupcakes make a great addition to the menu.

If you’ve forgotten to buy your Jubilee cupcake toppers and union jack cupcake cases, and you’d like to have a Royal Jubilee theme, then why not colour your frosting with these red, white and blue swirls?

Method

To make the swirls, make a regular batch of butter cream.  To achieve a whiter frosting try using Lurpac unsalted butter and mix in a mixer with your icing sugar for at least 10-15 minutes. The longer you mix the butter cream the whiter it will become. Read the rest of this entry »
