Treacle and Ginger Flapjacks

It’s nearly 5th November which means it’s soon to be Bonfire night!

Treacle toffee (which is also known as Bonfire Toffee ) is usually considered a Bonfire night’s treat.

Treacle toffee is hard and brittle, and is obviously not suitable for toddlers and young children. With this in mind I decided to make a family friendly batch of flapjacks which includes treacle.

Flapjacks are really simple to make and you can easily involve kids in helping to make it. My little boy had a great time mixing and stirring all the ingredients together!

I’ve also added ginger which is one of my favourite spices, it’s so warming and gives the flapjack an additional richness.  Crystallised stem ginger is best, however on this occasion I used some remaining glace ginger I already had in the cupboard.

Ingredients

140g light brown sugar

175g butter

100g treacle

100g golden syrup

350g rolled oats

4tsp glace ginger or 75g crystallised ginger

Method

-Preheat the oven to 180C or Gas mark 4

-Grease and line a 9” x 9” (23cm x 23cm) baking tin.

- Over a low heat melt the butter, sugar, syrup and treacle

-Then add the rolled oats and mix until the oats are coated with the mixture

-Distribute the ginger evenly through the mixture

-Spoon the mixture evenly into the baking tin

-Bake in the oven for 20-25 minutes.

-After coming out of the oven, cut into pieces whilst it is warm. This is easier  before it cools and hardens.
